Sian’s feta and artichoke galettes

It’s light and easy to eat and something that the 25-year-old make-up artist from London enjoys making when her friends pop round to the home she shares with two cats and a friend in Peckham.
What you need
500g pack of frozen all butter puff pastry – thawed
1 jar artichokes hearts
1 pack of feta cheese
few sprigs of thyme
What you do
Preheat oven to 220ºC
Roll out pastry to a rectangle. Using a sharp knife cut into 30 squares. Place on a baking sheet.
Drain artichoke hearts and cut each in half or thirds depending on size. Crumble the feta into the medium sized pieces.
Brush each pastry square with beaten egg, then place a piece of artichoke and some feta in the centre of each, scatter with thyme leaves. Bake for 10 – 12 minutes until pastry is risen and golden and the cheese is just beginning to brown.


Perfect party food. Being self contained on the pastry means there’s a hand free for that glass of wine. Cheers Sian.
